Course Description:

This course reviews the microbiological ecology of a food manufacturing facility, introduction and description of microbial, as well as chemical and physical food safety hazards. In addition, it identifies how different environments and products can select for certain food safety hazards.

 

Learning Objectives:

  • Develop and implement control strategies selective to facility
  • Understand source and importance of previous food safety incidents
  • Increase knowledge of microbiological criteria to conduct effective sampling plans

Dr. Doug Marshall

 

Dr. Doug Marshall is known for his engaging, energetic speaking power that he delivers to all attendees. Along with his dynamic personality, Dr. Marshall brings with him over 20 years' experience in the industry and currently serves as Chief Scientific Officer with Eurofins Microbiology Laboratories, Inc.

Dr. Marshall has written over 250 publications, including his completion of the 4 volume Handbook of Food Science, Technology and Engineering, which he Co-Edited. Doug has received awards such as the Mississippi Chemical Corporation Award of Excellence for Outstanding Work and the International Association for Food Protection Educator Award.
